The term tourne is of French origin which means "turning" or general "shaping". It is also called a peeling knife.

It has a very short blade and inward curved blade is 7 cm or less, which allows for greater control and speed for shaping or peeling. The tip of the knife is used to remove damaged spots or eyes in potato.
