Guitar sheets are used in the handling of chocolate, ganache and other fillings.

It is similar to acetate but less rigid. Guitar sheets also tend to give slightly less shine on the chocolate surface, still shiny but less. In terms of handling, guitar sheets are more flexible but it need support when curved or rolled.
